How to Make Pizza Dough Fast

Sunday, June 28th, 2009

I was using another recipe and it took about 2 or more hours before pizza was on the table.

Then, I found this one, and pizza is actually ready in about 45 minutes from scratch. So - a recipe for  how to make pizza dough fast.

The ingredients you will need are:
230 ml warm water
1 spoon sugar
1/2 package of yeast (25 grams)
3 spoons olive oil
1 tea spoon salt
310 grams flour

Mix warm water yeast, sugar, olive oil and salt.

Put this mixture into flour and knead for about two minutes or less to get elastic dough.

Leave dough to rest for about 15 minutes - it will double in its size. Voila - pizza dough ready fast!

After 15 minutes spread it out evenly on and fill with whatever you want to have on pizza (vegetables, cheese, bacon etc.)

Bake in an own for about 15 minutes on 220-240°.

Bon Apetit!

Tuna In Dough - Yummy

Thursday, January 8th, 2009

This delicious (pesco) vegetarian meal may look complicated to prepare, but trust me - it isn’t - actually trust my hubby - it isn’t ;)

*to clear some things - I said it is pesco vegetarian and pesco vegetarians eat fish and animal products, such as cheese, milk, eggs… Please do not confuse with vegan - vegans are people who do not eat either fish nor animal products. Besides this recipe is not about promoting vegetarianism or tuna :D It is about eating good. Ok? ;)

Ingredients:

Filling:

1 tuna can
100 g chopped olives
100 g chopped champignons (button mushrooms)
3 chopped pickles
1 egg (we used only egg white- yolk was used for applying on dough before it was put it in the oven)
2 spoons sour cream

*you can mix all together, just make sure to stir the egg (in our case yolk) and sour cream first - then add all other ingredients. (on the photo above)

*it is also important to bring out that if you don’t like tuna or fish generally, you can use something else, for example spinach, pumpkins, meat, cheese etc. There are many options available - as many as you can think of.

Puff paste (dough) …. to make it easier, you can bought frozen puff paste… But homemade is homemade isn’t it? … And we were so proud of it :)

1/2 kg flour
1 fresh yeast
1 egg
1 small cup of oil (we used olive oil)
250 ml of milk
1 tea spoon of salt
100 gr of margarine
100 ml warm water

Put fresh yeast in warm water (some people also add half tea spoon sugar so that yeast reacts sooner). Leave for 10 minutes until it rises (on the picture above on the top left side).
Mix dough - mix all ingredients (yeast, flour, egg, oil, milk, salt), but leave out margarine for now (all ingredients on the picture above).

Knead until the dough is smooth. Separate on three parts and make 3 small balls (on the photo above). Gently roll out all three balls - you can use your hands - it does not have to be thin.
When dough is rolled, apply margarine on each piece. And then put all three pieces together - one on another, and gently press. Place in refrigerator for 15 minutes.

Bravo, you just made your homemade puff paste :) And as I said earlier it can be bought, and that would take all the trouble with kneading and rolling and then cleaning all the mess ;).

Roll out the dough - make it as big as the size of a oven. Use a knife to draw a fish. Check the photo above. Cut ends of the dough just as on the picture below:

Place the filling on the “fish” and start “entwine”. Put one stripe over the other - just like on the photo. Start at ‘the head of the fish’ - just like that:

When done, apply yolk (that’s why I used only egg white for the filling, plus egg whites are much, much healthier) on the dough - you may use your fingers. It may be a bit sticky, but who cares…

And off we go into the oven - on 200 Celsius degrees for approximately 15 - 20 minutes and then additional 10 minutes (or less) on 180 Celsius degrees. When the meal is done, it should look like this:

And this is how it looks on the table. Yummy!

Bon Apetit! ;)

We also had mixed salad with lettuce, tomato, corn, red paprika and white soft cheese.

Of course the ingredients here are for 4 persons, and as you can see there are only 2 plates - so, yes we overate :D Again. but then we went walking, so shhh … we burned all the calories ;)

There were more than half ‘fish’ left, and we were a bit worried what to do with it. However, we had a friend visiting in the evening and it made  perfect cold snack. Same pieces as you can see them on photo above were cut in two pieces and nicely put on a plate. He was thrilled and so were we!
